Halloween: a fun celebration which little ones gaining popularity in Australia. Who doesn’t love the opportunity to get dressed up as whatever or whoever you like not to mention all the treats!
As for fuelling our little monsters, what better time to turn the food vibrant greens, oranges, and purples than at Halloween! No reason why food can't join in the dressing-up fun, simply add a pair of googly eyes to transform your creation into a spookier treat and surprise them in their lunch boxes.

Monster Pancakes
Ingredients:
100 g (1 cup) rolled oats
50 g (2 cups) baby spinach
1 egg
1 banana
125 ml (1/2 cup) milk of choice
1 tsp vanilla extract
1 tsp baking powder
toppings of choice for faces
Method:
Place the oats into a babycook and blitz until you have a coarse flour. Transfer to a mixing bowl and add the baking powder. Stir to combine.Place all remaining ingredients, except the egg, into food processor or babycook and blitz until completely smooth.Pour the green liquid into the bowl of dry ingredients, crack in the egg, and whisk until well incorporated.Heat a large frying pan over a medium heat. Once hot, add a touch of butter or coconut oil and pour the batter in quarter cupfuls into the frying pan.Cook for about 5 minutes on one side.Gently and carefully flip the pancakes and cook for about 3 minutes on the other side until fully cooked through.Keep the cooked pancakes warm on a plate and repeat with remaining spinach pancake batter.Serve the pancakes on your favourite plate and have fun creating grizzly monster faces!
