Ginger and Apricot Chicken

We loved this recipe so much, that we’ve done it 3 ways. Packed with flavour and great for any stage of weaning or the whole family. You can even fire up the BBQ or pop in the air fryer….

GINGER & APRICOT CHICKEN PURÉE

SUITABLE FROM 6 MONTHS

MAKES 2 servings / PREPARE 10 mins / COOK 15 minutes

INGREDIENTS
225g Chicken, cut into small cubes
4 tbsp Light low salt soy sauce
3 Garlic cloves
2 tbsp Ginger, peeled and roughly chopped
3 Soft dried apricots
2 Limes, juice

INSTRUCTIONS

Place chicken, garlic, ginger and apricots in the Béaba Babycook® steamer basket.

Pour water into the tank (level 3 for Original, Solo, Duo and Neo), (Solo Express; Eco Mode 170ml).

Start the steaming cycle.

After cooking, reserve the cooking juices for later.

Transfer the cooked chicken, garlic, ginger and apricots to the Babycook® bowl.

Add the soy sauce, lime juice and a small amount of the cooking juices and blend. Add more cooking juices if needed to reach required consistency.

Transfer to a bowl and serve.

GINGER & APRICOT CHICKEN

MAKES 6 x Drumsticks/ PREPARE 10 mins / COOK 30 minutes

INGREDIENTS
6 Organic Chicken Drumsticks
1 tbsp Sesame seeds

For the Marinade:
6 tbsp Light low salt soy sauce
4 tbsp Sesame oil
3 Garlic cloves
2 tbsp Ginger, peeled and roughly chopped
3 Soft dried apricots
2 Limes, juice
2 tbsp Cold water

INSTRUCTIONS

Blend all of the ingredients for the marinade in your Béaba Babycook® until you get a smooth consistency.

You can set aside some of the marinade for later to heat, and serve with the cooked chicken.

Put the chicken drumsticks in a large freezer bag and then pour the marinade in. Give the contents a good squeeze and put the bag in the fridge for a couple of hours (you can leave it overnight if you are preparing dinner ahead), giving it a bit of a shake every now and then to ensure the chicken is marinating evenly.

Once ready to cook the chicken, pre-heat the oven to 190C (175C fan oven), fire up the BBQ or pop in the air fryer!

For Oven:
Pour the contents of the bag into a roasting tin, sprinkle the sesame seeds over the chicken and bake in the oven for approx. 30 minutes, turning once or twice so the drumsticks brown evenly.

For BBQ:
If cooking on the BBQ, remove the drumsticks from the bag and shake off the excess marinade and cook until a sharp knife stuck in the thickest part of the drumstick yields clear juices – 20 minutes approximately turning every now and again.

For Air Fryer:
If cooking in the air fryer, remove the drumsticks from the bag and shake off the excess marinade and cook until a sharp knife stuck in the thickest part of the drumstick yields clear juices – 20 minutes approximately turning half way through.

If you have set aside some of the marinade at the start, pour this into a saucepan, cook it down for 10 minutes and serve alongside the chicken.

Always check that chicken is cooked through before eating.

For children from 9 months, cut the chicken off the drumstick ensuring it does not contain any bones.
Serve with seasonal veg, a salad or rice.
