It's National Avocado Day today so here is a yummy and healthy Mac n Cheese recipe you can make in your Babycook!
INGREDIENTS
- 340 grams shell pasta
- 4 cups spinich
- 1/2 avocado
- 1/4 cup olive oil
- 1/4 tsp salt & pepper
- 1/4 tsp garlice powder
- 2 tbsp greek yogurt
- 1 tbsp mozzarella (optional)
INSTRUCTIONS
- Steam cook pasta shells with water level three using the pasta/grain insert.
- Steam spinach on water level 1.
- Place spinach into blending bowl. Add in avocado, olive oil, seasonings, & Greek yogurt. Puree until smooth. Add a dash of vegetable stock if necessary.
- Place pasta into bowl, pour sauce over and stir until evenly distributed.
- Sprinkle Mozzarella on top as desired.
