Purple Potato Mash
A fun take on the classic mash! Purple potatoes offer an extra boost of antioxidants known as anthocyanin.
2 purple potatoes, sliced into chunks
1/2 tsp salt
- 1/2 tsp pepper
- 1/3 cup milk
- 2 garlic cloves
- 1 tbsp butter
Olive oil drizzled
- Place the potatoes into the steam basket. Steam on water level 3.
- Once finished, transfer the potatoes into the blending bowl.
- Place the salt, pepper, milk, garlic, butter in the blending bowl.
- Pulse blend to puree until thoroughly mixed, adding in more milk if needed.
Once mixed, take out and place into serving bowl. Top with additional salt, pepper and spices. Drizzle olive oil if desired. Enjoy!
