Mother's Day Crepes with Raspberry Yoghurt

Nothing says "we love you, Mum" quite like breakfast in bed, and these soft, golden crepes are an easy way for little hands to help make it happen. The batter comes together in seconds in your Beaba Babycook blending bowl, so there's no whisking and very little washing up. Makes: about 8 crepes

Ingredients

For the crepes

  • 300ml milk
  • 2 eggs
  • 160g plain flour
  • 20g unsalted butter, melted, plus a little extra for the pan

For the raspberry topping

  • 1 small tub of Crème Fraîche, or around 150g plain Greek yoghurt
  • A handful of raspberries (fresh or frozen and thawed)

Method

  1. Blend the batter. Add the milk, eggs, flour and melted butter to your Babycook blending bowl. Blend until the batter is completely smooth with no lumps of flour.
  2. Rest the batter (optional). If you have time, let the batter sit for 10 to 15 minutes. This gives softer, more tender crepes, but they'll still work if you cook them straight away.
  3. Heat the pan. Warm a non-stick frying pan over medium heat and brush it with a little butter.
  4. Cook the crepes. Pour in a small ladle of batter and tilt the pan so it spreads into a thin, even circle. Cook for about a minute, until the edges lift and the underside is golden, then flip and cook for another 30 seconds or so. Repeat with the remaining batter, adding a little butter to the pan as needed.
  5. Make the topping. Gently mash the raspberries with a fork, then stir them through the fromage blanc or yoghurt for a pretty pink swirl.
  6. Serve. Spread or spoon the raspberry yoghurt over the warm crepes, then fold or roll them up. Happy Mother's Day!

Tips for serving crepes to little ones

  • Cut into strips. For toddlers, slice crepes into finger-sized strips or small squares that are easy to pick up and chew.
  • Keep it low in sugar. The crepes are unsweetened, and the fruit adds natural sweetness. Grown-ups can add maple syrup or a dusting of icing sugar to their own plate.
  • No honey under 12 months. If you're sharing crepes with a younger sibling, keep honey off their plate.
  • Check for allergens. This recipe contains egg, milk and wheat. Make sure your little one has already tried each of these on its own before serving them together.
  • Cool before serving. Let crepes cool slightly and test the temperature before giving them to your child.

What can I use instead of crème fraîche?

Plain Greek yoghurt is the easiest swap and gives a similar creamy, slightly tangy topping. Plain cream cheese loosened with a little milk also works for older children.

Can babies eat crepes?

These crepes are best from 12 months. They contain egg, milk and wheat, so make sure your child has already tried each of these separately. Serve them in strips or small pieces that are easy to manage.

Can I make the batter ahead of time?

Yes. Blend the batter, cover it and keep it in the fridge overnight. Give it a quick stir or another short blend before cooking, as it may thicken slightly.

Can I freeze crepes?

Yes. Let the crepes cool completely, stack them with baking paper in between, and freeze in an airtight container for up to a month. Thaw in the fridge and reheat gently in a pan.

Can I make crepes dairy-free or egg-free?

For a dairy-free version, use your child's usual plant-based milk and a dairy-free spread instead of butter. Egg-free crepes are possible but tend to be more delicate; adding a little extra flour and milk can help them hold together.
